  • Vinification Marlborough. Vinification: grapes are harvested early in the morning to maintain maximum freshness. After a five-day mashing to extract color and flavor, the wine is fermented in stainless steel. After fermentation, the wine is partially aged in oak barrels.

    "Bishop's Leap" Pinot Noir 2020
  • The Marlborough area of New Zealand is known for the finesse of its wines. Credit to a cool climate, rainy just enough, and fertile soils rich in valuable micro elements. Pinot Noir grapes, which have reached full maturity, are harvested early in the morning, when the heat is not yet excessive and there is no risk of compromising their delicate aromatic framework. The maceration phase lasts for just under a week, after which the wine is fermented, in temperature-controlled stainless steel containers. Then, after racking, there is a maturation phase, during which some of the wines are left to mature slowly in oak barrels. In the glass it is a beautiful garnet red color, with pleasant red fruit notes, ranging from raspberries to cherries. In the mouth it is soft and fruity, with an excellent balance of acidity and fruit. A pleasant red that can be offered as early as the aperitif, while lunch or dinner is being prepared. At the table it goes well with delicate meat dishes. Perfect with a veal roast or a rich vegetable pie.
