Why: The alpine climate strongly influences the organoleptic characteristics of the local wines: the grapes, harvested late, are subjected to strong temperature changes due to the autumnal thermal excursion (+22?C during the day and 0?C at night); this phenomenon, typical of mountain areas, favours the formation of aromatic precursors in the bunch, which considerably enrich the odour component of the wines. The work in the vineyard of Les Cretes reflects the strong desire to minimize pesticide and fertilizer interventions, respecting the natural production factors.
