    • Ca' del Bosco is a company that certainly needs no introduction. Nor do its Franciacorta DOCG wines need many words to describe them. Every wine lover and sommelier has tasted them at least once in their life. This Vintage Collection Satèn is no exception, an embrace of elegance and softness. But let's proceed in order. It is produced in the green heart of Lombardy, among the rolling hills surrounding Brescia and Lake Iseo. Ca' del Bosco's Franciacorta DOCG Vintage Collection Satèn is made exclusively from white grapes and is one of the most elegant expressions of the Italian Metodo Classico. This type, which is exclusive to the Franciacorta DOCG appellation, is characterised by a pressure of less than 5 atmospheres. This gives the wine a creamier mousse and a more velvety sensation on the palate. Ca' del Bosco's Vintage Collection Satèn is made from a blend of 85% Chardonnay and 15% Pinot Bianco, sourced from 30 certified organic vineyards. After rigorous selection, the grapes are washed and dried. This is followed by a slow fermentation of 5 months in oak barrels. The wine is then aged on the lees for 48 months, developing complexity and finesse. The dégorgement takes place in the absence of oxygen, ensuring purity and longevity. Straw yellow in colour with golden reflections and a fine, persistent perlage, the nose reveals hints of peach, pineapple, citrus fruits, acacia flowers and pastry notes. On the palate, it is creamy, appropriately fresh and savoury, with a long, slightly citrus finish. Perfect as an aperitif, it pairs beautifully with delicate fish dishes, sushi, carpaccio, tartare and fresh cheeses.
