Angel's Share, from Two Hands, is an extraordinary Shiraz. It comes from the heart of McLaren Vale, one of South Australia's most iconic wine regions. This wine combines the power and aromatic richness of Shiraz with the elegance and complexity typical of great McLaren Vale wines. One of the cradles of Australian wine, this valley is renowned for its ability to produce rich, structured wines. Located close to the coast, McLaren enjoys a Mediterranean climate, characterised by hot, dry summers and mild winters. The proximity to the ocean helps mitigate summer temperatures, while the varied soils, ranging from deep clays to red sands and limestone rocks, give the wines a unique complexity and structure. Optimal conditions for the production of Shiraz, which can produce ‘powerful and spicy’ wines here, with a fine tannic structure that guarantees a great capacity for ageing. Here, the grapes are crushed and fermented in open fermenters of different sizes, with regular pumping over to promote the extraction of colour and tannins. After a period of about 15 days of maceration on the skins, the wine is transferred to French oak barrels, with 12% new barrels, for ageing for about 14 months. At the end of maturation, the wine is bottled without filtration to preserve the integrity and purity of the initial fruit. In the Angel's Share glass, it has an intense purple colour with violet reflections. On the nose, it reveals a fascinating aromatic complexity, dominated by aromas of ripe black fruits such as blackberry and blueberry, enriched by spicy notes of black pepper and cloves. In the mouth, however, it reveals itself to be ample and generous, with silky, well-integrated tannins. The finish is long and persistent. A wine with good ageing potential, if stored well it can evolve beautifully for up to 10-12 years, developing further aromatic nuances and complexity.
