Subtle notes accompany aromas of summer fruits, delicate Christmas spices and red currants, enriched with fine hints of pastry. On the palate, this wine seduces with its soft tannins and intense cocoa notes. The character of Cabernet is fully expressed with vibrant fresh fruit and a delicate oak contribution. A rustic note of sourdough accompanies the exuberant flavours of plum, blackberry, wild blackberry and cherry, particularly black cherry.
    • Vinification Australia's powerful Bin 389 Cabernet Shiraz is a cuvée vinified from Cabernet Sauvignon and Shiraz grapes. Bin 389 Cabernet Shiraz is an Old World wine through and through, as this Australian exudes an extraordinary European charm that clearly underlines the success of Old World wines. The grapes for this Australian red wine are harvested exclusively by hand when they are perfectly ripe. After harvesting, the grapes are immediately taken to the press. Here they are selected and carefully sorted. Fermentation then takes place in small temperature-controlled wooden vats. At the end of fermentation, Bin 389 Cabernet Shiraz is aged for a further 12 months in American oak barrels, 36% of which are new.

Each vintage is born from a meticulous selection of vineyards in Coonawarra, Barossa Valley and McLaren Vale, where Cabernet and Shiraz grow under the intense sun and ocean breezes that sculpt their character and depth. First created in 1960, it combines the strength of Cabernet with the softness of Shiraz, ageing in barrels that have housed the legendary Grange.       Created in 1844 by Christopher Rawson Penfolds, the Penfolds estate is still one of Australia's best-known and most appreciated wineries worldwide. The founder was a young doctor of English origin who was firmly convinced of the healing properties of wine. For this reason, before leaving his homeland for the other side of the world, he obtained some French vine cuttings which were planted in Adelaide, near the cottage that Penfold built with his wife. Initially, the Penfolds winery produced almost exclusively brandy and fortified wines for medicinal purposes. Then, around 1950, it began the slow transition to table wine production. Today, the company is owned by Tooth and Co. and the countryside is treated with the utmost respect for the environment.
