Today we are in the heart of the Drakenstein Valley. Here, in the mountains of the Western Cape, 1685 Pinotage, a Boschendal wine, is produced. The estate, founded in 1685 by French Huguenot settlers, is one of the oldest in the country and covers an extraordinary area, the Cape Floral Kingdom, a UNESCO World Heritage Site for its unique biodiversity. Made from 100% Pinotage grapes, this grape variety, which can be considered a symbol of South Africa, is a cross between Pinot Noir and Cinsault. Created in 1925, it is known for its ability to express both the finesse of Pinot Noir and the robustness of Cinsault. The grapes are harvested by hand and immediately transported to the winery, where they are selected and gently destemmed. Fermentation takes place in stainless steel tanks and small wooden barrels at controlled temperatures. The wine is then aged for 12 months in 225-litre French oak barrels, giving the final product complexity and structure. Intense and deep red in colour, the nose reveals aromas of blueberries, sour cherries, ripe plums, vanilla and chocolate.
