Pinotage represents the winemaking flag of an entire country: South Africa. A grape variety born almost as a gamble, now winning over wine lovers across the globe. We are in Stellenbosch, the cradle of South African viticulture. Here stands the historic Delheim winery, passionately managed by the Sperling family with deep respect for the land. The estate vineyards flourish on the slopes of the majestic Simonsberg Mountain. This territory benefits from ancient soils made up of decomposed granite, ideal for drainage. The decisive climatic factor, however, is the proximity to the Atlantic Ocean. The cool sea breezes constantly blowing through the vineyards soften the heat of the African sun. In this way, the grapes ripen slowly, developing intense aromas. The wine is made from 100% Pinotage. This grape variety is a native South African crossing created in 1925 between Pinot Noir and Cinsaut, originally known as Hermitage. The grapes are harvested strictly by hand from hillside vineyards and immediately taken to the cellar. Here the bunches undergo destemming and crushing. Fermentation takes place in modern stainless steel tanks. During this phase, the winemaking team performs frequent pump-overs, up to six times per day, to extract colour and silky tannins. Afterwards, malolactic fermentation is carried out partly in oak and partly in stainless steel. For ageing, the winery chooses French oak barrels of 300 and 500 litres, where the wine rests for a full 18 months before the final blending. Intense violet colour with a lively hue. On the nose the impact is juicy and expressive. Clear red fruit flavours emerge, beautifully supported by delicate floral nuances and notes of clove. On the palate it reveals cranberry, rich plum notes and a pleasant hint of vanilla. The finish is soft and elegant. The subtle and discreet touch of oak results in perfect overall balance.
