The story of Delheim is inseparably linked to the Sperling family, and especially to the legendary Spatz Sperling, who arrived here from Germany after the war. With his charismatic personality and visionary spirit, Spatz did not simply make wine – he literally helped shape the wine culture of Stellenbosch by co-founding the country’s first Wine Route. Today, the estate is managed with the same passion by his children Victor and Nora, who continue to uphold their father’s innovative spirit. For Delheim, making wine means above all protecting the environment. This is why the winery follows a production philosophy strongly focused on sustainability and biodiversity. It not only reduces environmental impact, but also seeks to coexist harmoniously with nature. It is no coincidence that a large part of the property is preserved as untouched natural reserve, while vineyard practices are designed to respect the natural life cycle of the soil.
