It comes from the evocative Coastal Region, the large wine-growing area surrounding Cape Town and home to some of the most historic terroirs in South African winemaking. The true strength of the region lies in its microclimate. During harvest season, cool currents rising from the Atlantic Ocean continuously refresh the vineyards. This beneficial temperature variation prevents the grapes from overripening and preserves an outstanding natural acidity. Made from 100% Pinotage, this grape variety was created in South Africa in 1925 through a crossing of Pinot Noir and Cinsaut. When vinified as a rosé, Pinotage leaves behind its darker and more powerful tones, bringing instead an overwhelming fruity freshness and immediate drinkability, confirming its extraordinary versatility. The grapes are harvested exclusively by hand in order to preserve the integrity of the bunches. Once in the cellar, they are destemmed and gently crushed. The juice is then transferred immediately into the press, where it is separated from the skins without any prolonged maceration. Alcoholic fermentation is carried out using carefully selected yeast strains. The process takes place at different controlled temperatures in order to achieve a layered and multifaceted aromatic profile. A light filtration finally precedes bottling. In the glass, the wine captivates with a salmon-pink colour enriched by delicate pale pink reflections. On the nose, the impact is one of disarming freshness. Clear notes of pomegranate and cranberry intertwine beautifully with hints of candy floss and delicate floral nuances. On the palate, the sip is driven by juicy fresh fruit flavours. The finish is clean, elegant and leaves behind a pleasant citrusy trail. Perfect from aperitif through to the entire meal.
