This Ottella rosé is produced in Alto Mincio, an area that stretches between Veneto and Lombardy, not far from Lake Garda. Here, the climate is tempered by the lake, with beneficial temperature variations that are good for the grapes. The soils, on the other hand, are rich in clay, silt and skeleton, well-drained and ideal for red varieties interpreted with the freshness of rosé. Specifically, RosesRoses is produced from a blend of Corvina Veronese, Rondinella and Lagrein, the latter chosen to add freshness and a hint of herbaceousness. The grapes are harvested by hand between the end of September and the beginning of October. Vinification takes place in steel, with a short maceration on the skins (about 10-12 hours) which guarantees a beautiful powder pink colour. Fermentation lasts about 14-18 days, at a controlled temperature, and after fermentation, malolactic fermentation is avoided in order to maintain acidity. This is followed by ageing in steel tanks and a minimum period of maturation in the bottle before being released for sale. Light pink in colour, with onion skin hues, the nose reveals fruits such as white peach, strawberry and cherry, with a hint of minerality reminiscent of wet stone. On the palate, it is a slender wine with good freshness and well-balanced acidity that makes it vibrant. Perfect as an aperitif, perhaps accompanied by simple finger food, it is excellent on the table paired with baked sea bass or trout fillets with aromatic herbs. Also try it with white meat dishes, such as grilled chicken or a rich salad.
