Delheim’s Chenin Blanc Wild Ferment delivers a surprising and authentic sensory experience. We are in Stellenbosch, South Africa’s most famous wine region. Among these spectacular hills lies the historic Delheim winery, passionately and sustainably managed by the Sperling family. The charismatic founder, Spatz Sperling, became famous not only for the quality of his wines, but also for launching South Africa’s very first Wine Route in 1971. Today, the estate vineyards stretch across the marl-rich and decomposed granite soils of the Simonsberg Mountain slopes. Here, altitude and exposure create excellent temperature variation between day and night. This wine proudly carries the prestigious Stellenbosch designation, part of South Africa’s strict “Wine of Origin” (WO) certification system. This guarantees full traceability, geographical origin of the grapes and the high quality standards of the region. Made from 100% Chenin Blanc sourced from the oldest and most historic vineyard block on the estate, these old vines bring extraordinary aromatic concentration, delivering a deep and authentic expression of the terroir. To preserve the integrity of the fruit, harvesting is carried out by hand at first light. Once in the cellar, the grapes are destemmed, crushed and gently pressed. The juice rests at cold temperatures for almost two days. It is then transferred into wooden barrels and concrete tanks. Here spontaneous fermentation begins, activated exclusively by the indigenous yeasts naturally present on the grape skins, without the use of selected commercial yeasts. Once fermentation is complete, the wine ages on its fine lees for a further nine months. A light filtration and minimal sulphur addition follow before bottling. The wine then rests in the cellar for another year of bottle ageing. Golden reflections in the glass, with a nose that is expressive and captivating. Warm aromas of stone fruit and vibrant notes of orange peel dominate, supported by delicate and elegant hints of honeysuckle. On the palate it reveals vibrant fruit and extraordinary tactile richness. The sensation is deep, rich and enveloping. The finish extends beautifully with memorable citrus and mineral persistence. Already excellent today, this Chenin Blanc has outstanding ageing potential. Over the years – even after 7 or 8 years – the richness of the fruit and the ageing in wood and concrete will allow it to develop evolved notes of petrol and toasted dried fruit.
