Chenin avec Chêne by Simonsig is a white wine that, according to its producers, represents the perfect balance between freshness and complexity. A South African white wine, it is made from 100% Chenin Blanc, aged in wood in this case. Produced in the renowned Stellenbosch region, this wine is an interesting expression of the South African terroir. Stellenbosch, located about 50 km east of Cape Town, is considered the wine capital of South Africa. The Simonsig vineyards are located at an altitude of 200 metres above sea level, on mineral-rich clay soils. The Mediterranean climate, with hot summers and cool winters, is tempered by ocean breezes, creating ideal conditions for growing Chenin Blanc. The grapes used for this wine come from Simonsig's oldest Chenin Blanc vineyard, planted in 1986. Harvesting takes place in four different stages of ripeness to capture the full aromatic spectrum of the grape variety. The grapes are pressed whole to preserve elegance and freshness, while the ripest ones remain in contact with the skins for 18 hours. Finally, part of the grapes are vinified with carbonic maceration to add complexity and structure. Fermentation takes place spontaneously in 225- and 400-litre French oak barrels, followed by ageing on the lees with regular bâtonnage for 11 months. It has a light golden hue. The nose reveals aromas of dried citrus flowers, peach and notes of walnuts and honey. On the palate, there are hints of white peach, citrus and dried fruit, with a well-defined structure, hints of oak, lively acidity and a long, persistent finish. Pair with fish dishes, sushi, shellfish and crustaceans. Also perfect with white meats and creamy cheeses.
