Timepiece, a pure Chenin Blanc, is a South African white wine produced by the Jordan winery. A wine of great quality, it best represents the potential of the Stellenbosch terroir. Complex and structured, it can be enjoyed by a wide audience, from novices to experienced winelovers. We are, as mentioned, in the Stellenbosch area of the Western Cape. The Stellenbosch appellation, for those who do not yet know, is one of the most prestigious in South Africa. About 16 thousand hectares, with a Mediterranean climate, hot summers and mild winters. Here, with the help of a clay-limestone soil, wonderful wines with a special structure and minerality are produced. Here, the grapes come from historic vineyards, where Chenin Blanc is perfect for producing wines of great quality. Timepiece Chenin Blanc, specifically, comes from a traditional winemaking process. About half of the must is fermented in French oak barrels, while the other half is fermented in 400-litre Italian amphorae. This gives the wine greater complexity and structure. At the end of the transformation, the wine is then matured 'sur-lie' for 6 months, with regular punching-down. In the glass it has a beautiful, brilliant straw yellow colour. The nose presents fascinating aromas of angelica, quince and wild berries. In the mouth it is fresh, savoury and mineral, with a savoury, ethereal finish. Perfect as an aperitif, it accompanies lean fish, soft cheeses and lightly spiced dishes.
