We are in the heart of the Côte de Nuits, where the soil gives nothing away, yet rewards those who know how to listen with true masterpieces. The winery is based in Gevrey-Chambertin, a name that instantly makes Burgundy lovers’ eyes light up. Philippe Livera runs this family estate with an approach that goes far beyond simple craftsmanship. The vineyards behind this red wine benefit from their proximity to some of the village’s most prestigious crus. The soil is a mosaic of limestone marl and clay that forces the roots to dig deep in search of nourishment. It is no coincidence that this label behaves in every respect like a “little Gevrey”. Made from 100% Pinot Noir, the grapes in these parcels achieve optimal phenolic ripeness thanks to sun exposure that protects the fruit from excessive heat peaks. In the cellar, the grapes are fully destemmed to prevent the stalks from releasing green or bitter tannins. Fermentation takes place in oak vats, with colour and aromas extracted as gently as possible. The wine then rests for 12 to 18 months in old oak barrels. The choice not to use new oak is deliberate. It allows the wine to breathe and soften its tannic structure without masking the fruit with intrusive vanilla or toasted notes. It is an approach to time that rewards patience and finesse. Bright and translucent ruby red in colour, the nose bursts with small red berries such as redcurrant and wild morello cherry. With time in the glass, earthy woodland notes and hints of white pepper begin to emerge. On the palate the attack is fresh and lively. The tannins are present yet silky, almost like a gentle caress across the palate. The finish is clean and leaves behind a savoury impression that immediately invites another sip.

Under his leadership, the Domaine has increasingly bottled more of its own production rather than selling it to large négociants, with the aim of highlighting the unique identity of its vineyards. Today the estate counts around 8 hectares of vines, most of them located within the commune of Gevrey-Chambertin itself. Its true pride lies in the Vieilles Vignes – old vines, many of which are over 60 or even 70 years old.
