    • Among the perfectly ordered rows of one of the oldest and most fascinating vineyards in all of France. This great red wine is born precisely there, crafted by a legendary estate that chose to ban chemicals entirely and place all its trust in absolute respect for the ecosystem. Joseph Drouhin tends its vineyard parcels in Savigny-lès-Beaune, a charming wine village located just a few kilometres from the historic capital of Burgundy wines. This area is characterised by rolling hills that open out like a fan and benefit from natural protection against the cold northern winds. The soils possess magnificent composition, where limestone blends with layers of marl and clay ideal for retaining moisture. The entire estate is managed according to the strict principles of organic and biodynamic farming. A demanding yet essential philosophy aimed at allowing the land itself to speak directly through the glass, without filters. The red wines of this specific area have long been renowned for their ability to combine immediate charm with extraordinary ageing depth. The credit for this oenological miracle belongs to Pinot Noir, vinified in its purest form. This grape variety is famous for its temperamental nature and requires almost obsessive dedication. Yet in these vineyards it finds its ideal habitat, transforming the nuances of the soil into unforgettable finesse. Harvesting is carried out strictly by hand, and before pressing the grape clusters are carefully selected. Fermentation takes place at controlled temperatures in thermoregulated tanks. The winemaking team deliberately opts for extremely gentle maceration in order to extract only the noblest and silkiest tannins while preserving the freshness of the fruit. The wine then rests for several months in oak barrels. The percentage of new oak is calibrated with precision to enrich aromatic complexity without ever masking the territorial identity of the grape. In the glass, it shows a ruby-red robe, clear and transparent as demanded by the finest Burgundian tradition. On the nose, the bouquet is refined, with ripe cherry and freshly picked wild strawberries standing out first. Floral hints of violet then emerge, enriched by subtle sweet spices and a delicate oaky touch resulting from the skilful use of wood. On the palate, it is true velvet. The sip is fresh, harmonious and supported by exceptionally fine and perfectly integrated tannins. The finish extends gracefully with pleasantly mineral notes. Delicious already today, this Pinot Noir also possesses excellent ageing potential, estimated between five and eight years from the vintage. Its lively acidity and overall balance will allow it to evolve magnificently, developing earthy woodland nuances without losing its vibrant freshness.
