In Burgundy, the name of a vineyard parcel can reveal clues about the nature of the soil. The term “Chouacheux”, which gives this Beaune AOC Premier Cru its name, likely derives from an ancient local expression linked to springs or to the particular composition of the terrain. The area of Beaune is a unique mosaic of geo-climatic nuances unlike anywhere else in the world. The Les Chouacheux vineyard lies on the lower part of the slope, on deep soils rich in calcareous alluvial deposits that give the wine generous structure and enveloping warmth. Here, since 2006, the Lescure family has farmed under certified organic practices, a decision that allows the vines to root deeply into living soil. This approach ensures that every grape carries the purity of the fruit and the mineral imprint of the Côte d'Or, without chemical interference distorting the message of nature. Made from 100% Pinot Noir, in this parcel the grape abandons its lighter, more delicate side to wear a more structured and profound expression. In the cellar, the grapes are carefully destemmed, but the berries remain whole during fermentation in stainless steel in order to preserve the freshness of the fruit as much as possible. Maceration is long, lasting between 18 and 25 days, the necessary time to extract colour and complexity without forcing extraction. The wine then rests for at least 18 months in tonneaux, larger barrels than the classic barrique, with the proportion of new oak limited to 20%. This slow ageing process allows the Pinot Noir to breathe and develop a silky tannic texture. Deep ruby red in colour, with reflections gradually turning garnet over time, the nose bursts with aromas of ripe red berries such as cherry and raspberry, followed by hints of liquorice and an earthy touch typical of the Burgundian undergrowth. On the palate it is full, structured and harmonious, with a finish that seems almost endless. This red wine has remarkable ageing potential, capable of resting in the cellar for 10 to 15 years while evolving towards notes of leather and sweet spices.

After Chantal’s passing in 1996, her sons Aymeric and Thibault took over the reins of the estate, choosing to honour their mother’s legacy through a bold and forward-thinking decision for the time: committing entirely to a form of viticulture deeply respectful of the land. Under their guidance, and thanks to the technical talent of François Chaveriat, the Domaine undertook a radical transformation that led to organic certification in 2009. The estate covers around 19 hectares of vineyards located in some of the most prestigious areas of the region. Its operational heart lies in Nuits-Saint-Georges, while the vineyards stretch north towards Chambolle-Musigny and south as far as Volnay and Meursault. This diversity allows the Domaine to produce almost twenty different cuvées every year, each one shaped by a specific micro-terroir – the famous Burgundian “climats”. While the vineyards are tended with artisanal dedication, in the cellar the guiding principle is “gentleness”. The winemaking philosophy avoids any kind of forceful intervention. Fermentations rely on indigenous yeasts, rackings are kept to a minimum and the use of oak is skilful and restrained, never overpowering. The goal is to craft wines that are authentic, pure and full of personality.
