Joseph Drouhin manages its historic vineyards in the heart of Beaune. This fortified town is the true beating heart of the region and holds centuries of winemaking tradition. Here, the limestone and marl soils benefit from an exceptional microclimate. The surrounding hills protect the vines from cold winds and ensure optimal sun exposure for the grapes to ripen perfectly. The estate chose to convert the entire property to organic and biodynamic farming. A courageous decision aimed at preserving local biodiversity and allowing the land to speak directly through the glass. Pure Pinot Noir, a grape variety renowned for being both demanding and delicate, finds in these vineyard parcels the ideal conditions to express its natural finesse at its highest level. In the cellar, vinification involves a very gentle maceration and moderate extraction to avoid weighing down the must. Fermentation takes place at controlled temperatures to preserve the varietal aromas intact. The wine is then aged for several months in fine French oak barrels. The use of new oak is kept to the bare minimum. This choice ensures that neither the authentic character of the grape nor the signature of the Burgundian terroir is overshadowed. Bright ruby red with remarkable transparency, the bouquet reveals an aromatic spectrum of crunchy red berries such as cherry, raspberry and wild currant. Elegant floral hints of fresh violet soon emerge, followed by subtle spicy nuances and a delicately oaked touch. On the palate, it impresses with its silky texture and extraordinary harmony. The tannins are polished and incredibly fine. A vibrant mineral backbone brings freshness and momentum, leading the palate towards a long, clean and persistent finish.
