    • Sensations Bright red colour. The nose reveals an intense aromatic bouquet, with notes of red cherry, plum and spicy nuances such as pepper and cloves, enriched by a slight touch of damp earth, typical of Burgundy soils. On the palate, the wine has a balanced structure, soft but well-integrated tannins and a refreshing quality that invites further tasting. The finish is persistent and velvety, with an elegant aftertaste of ripe red fruit and spices.
    • Vinification The vineyard is cultivated using organic and biodynamic methods, certified by ECOCERT (since 2001) and DEMETER (since 2005), with an average yield of 40 hl/ha. Vinification is based on maceration of the completely destemmed grapes for about twenty days, fermentation with indigenous yeasts, very little SO? and only mechanical pumping over (without punching down or bâtonnage). Ageing in barrels of 1 to 5 wines for 15-19 months refines the tannins while preserving the identity of the climates.
