A Pinot Noir with a bold and intense soul, perfect for those seeking the true face of Burgundy, without resorting to inaccessible Grand Crus. We are in Chevannes, in the heart of the famous Côte de Nuits, the part of Burgundy that has made history with its great red wines. Here, the main grape variety is Pinot Noir, which is at home on clayey and calcareous soils that give it both finesse and structure. David Duband uses grapes from selected plots, often adjacent to more prestigious areas, which significantly enhances the quality. In the cellar, the utmost respect is given to the grapes. David is a staunch supporter of organic farming, and this philosophy is reflected in the glass. His “secret” is the use of at least 60% whole grapes, i.e. with the stems in fermentation. This is not for everyone: it is an ancient technique which, if well managed, adds extraordinary complexity, structuring the wine with tannins that taste of spices and earthiness, without weighing it down. The result in the glass is a true concentrate of ripe fruit. Not the classic ethereal and light scents. On the nose, on the contrary, it is a power that makes itself felt immediately. Crème de cassis, blackberry syrup and redcurrant jelly. Finally, notes of nutmeg and toasted vanilla and balsamic hints of juniper berries. In the mouth, it is robust and intense, but not sharp. The tannins are present, still rich, but well balanced by a pleasant, almost velvety texture. Thanks to its structure and marked aromatic intensity, it has considerable ageing potential. At the table, however, it is the ideal companion for savoury dishes such as a tasty roast veal with juniper and thyme or a delicious lasagne with meat ragù.
David Duband's is certainly not a prestigious, time-honoured winery, but a dynamic business that, in just over thirty years, has become a benchmark in the prestigious Côte de Nuits. We are in Chevannes, a small town in the heart of the Hautes-Côtes de Nuits. The company has roots dating back to the 1960s, but it was in 1991 that the young David took over the reins of the family winery and began bottling under his own name. David Duband is the perfect example of how to honour a great tradition while revolutionising it with intelligence. Initially, like many of his generation, David produced more “modern” wines: dark, concentrated and with a marked use of wood, in line with the international taste of the time. But it was in 2008 that the decisive turning point came, a real “change of direction” that established his reputation. David understood that the true luxury of Burgundy is the finesse and ability of Pinot Noir to express its terroir without filters. Today, his wines are the exact opposite of that approach. They are lighter, more agile, vibrant and, above all, faithful to the terroir. The estate covers approximately 17 hectares, a mosaic of vineyards spread across 23 appellations, including some of the most famous in the Côte de Nuits, such as Gevrey-Chambertin, Vosne-Romanée and Nuits-Saint-Georges, reaching as far as the legendary Grand Crus such as Chambertin and Clos de Vougeot.
