Created in 1987 as a Supertuscan project, Il Pareto represents the innovative vision of the Folonari family, who chose to enhance the potential of the Greve in Chianti area for growing Cabernet Sauvignon. This wine is produced on the Nozzole estate, located at an altitude of between 330 and 370 metres above sea level. Il Pareto, Toscana IGT, is made from grapes that are harvested by hand and fermented in stainless steel tanks, with maceration lasting around four weeks. The wine is then aged for at least 30 months in French oak barriques, followed by further refinement in the bottle for around six months. This long ageing process helps to develop the complexity and depth that characterise this wine. In the glass, it has an interesting intense purple-red colour. The nose offers a complex bouquet with notes of red fruits, pomegranate, morello cherry, prune, incense, bay leaf and black pepper. The palate is dry, with a slight salty note. The finish is characterised by beautiful tertiary and spicy notes. A wine of great complexity from a young age, thanks to its structure and the natural presence of phenols and anthocyanins, Il Pareto has an extraordinary ageing potential, with a shelf life of up to 30 years. Historic vintages, such as 1987, still display a bright red colour without any brick-red notes. On the table, Il Pareto pairs well with red meat, game and mature cheeses.
