Soente is one of the good wines produced on the Montiano Estate owned by the Cotarella family. We are in the heart of Lazio where, in addition to interesting local grape varieties, there are often international grapes, perfectly adapted to the climate and soils of this area. In this case, for example, it is a pure Viogner, the result of important experimentation carried out on different clones. Its name, Soente, comes from the elision of one letter of the word 'sovente'. Lazio PGI, in this case all agronomic operations are aimed at obtaining balanced grapes, to produce fresh, savoury wines. After harvesting, the grapes are quickly delivered to the cellar to be immediately subjected to cryomaceration. This enhances the aromatic characteristics that then determine the particular olfactory note of the finished wine. Soente presents itself in the glass with a beautiful straw-yellow colour with greenish highlights. The nose is of great impact, with notes of citrus fruits and white flowers. In the mouth, however, it is above all enveloping, with a savoury and persistent finish. Perfect from aperitif to table, this Viogner accompanies simple but tasty dishes.
