Ribolla is the most representative grape variety of the Collavini winery. And Benedete, Ribolla Gialla Venezia Giulia IGT, is a perfect example. An ancient grape variety traditionally grown on the eastern hills of Friuli, it was initially the Benedictine monks of the Abbey of Rosazzo who promoted its cultivation in Collio. This interesting white wine is dedicated to those ancient monks. It is the result of a particular process. In this case, in fact, the must initially undergoes a long maceration on the skins that continues for about 18 hours. Only at that point, when all the aromas and fragrances have been extracted, is it fermented and then aged in steel. The result is a delicate but intensely fruity wine. Excellent as an aperitif, it goes well with hors d'oeuvres, soups, fish casseroles and shellfish.
Collavini is a historic, family-run company in Friuli. But at the same time with an international and innovative spirit. We are located in Corno di Rosazzo, among the hills of the Collio and Colli Orientali del Friuli DOC areas. And to do so, after years of experimentation, an original sparkling wine-making method was developed that combined the Martinotti-Charmat method with times and techniques reserved for the Metodo Classico. This is the "Metodo Collavini". Today the company can count on a vineyard area of about 170 hectares, from which it produces about one and a half million bottles. And of these, 200,000 are still made from Ribolla Gialla.
