Pinot Bianco Collio DOC 2021

Pure Pinot Blanc from a vineyard dating back to 1990. We are in the beautiful hills of Collio, where the soil and climate represent an inestimable wealth. In the vineyards from which the grapes used to produce this white wine by Ferruccio Sgubin come, the soil is composed of the typical marl of Collio. Harvested by hand, vinification involves super soft pressing of the grapes and fermentation at a controlled temperature, never above 16 degrees. The next stage of maturation involves dividing the wine into two parts. The first is placed in small 5-hectoliter oak barrels. The second one, instead, rests in steel tanks in contact with its fine lees. This slow maturation "sur lies", as the French say, continues until the following spring. The result is a pleasantly drinkable white wine with a distinct personality. Served well chilled it is ideal as an aperitif instead of the classic bubbly. With a few degrees more temperature, however, it goes very well with tasty dishes of fish and vegetables. That's quite a find.
