It originates in the heart of Friuli Venezia Giulia, in Cormòns (GO), an area renowned for the production of high-quality wines. It is the Collio DOC Pinot Bianco by Doro Princic. Collio is a veritable mosaic of microclimates and soils, characterised by predominantly marly soil, rich in minerals that give the wine a distinct elegance and complexity. The proximity to the Alps and the Adriatic Sea creates a unique climate, with temperature variations that favour the development of intense aromas and natural freshness. Cormòns, for its part, is known as the “City of Wine”, a place where the winemaking tradition has been handed down for generations. Doro Princic is one of the protagonists of this story. Made from 100% Pinot Bianco grapes, the harvest is strictly manual, carried out in the coolest hours of the morning to preserve the integrity of the grapes. In the cellar, the grapes undergo soft pressing and the most prized part of the juice, the free-run juice, is fermented at a controlled temperature. The wine is then aged on its fine lees for at least 8 months, acquiring structure, complexity and a pleasant roundness. Bright straw yellow in colour, the nose offers delicate aromas of white flowers, fresh fruit and a distinctive note of golden apple. On the palate, it is elegant, mineral and persistent, with a freshness that invites you to drink. A versatile wine, it is capable of evolving over time. It is perfect with fish dishes, especially shellfish and lean fish, but also goes well with seafood appetisers, delicate risottos and fresh cheeses.
The Doro Princic winery is a beautiful estate in Collio, one of the most renowned areas of Friuli Venezia Giulia for the production of high-quality wines. Founded in 1950 by Isidoro Princic, affectionately known as “Doro”, the winery has played a fundamental role in the development and promotion of the region's wines.
