Doro Princic's Sauvignon Collio DOC is made from 100% of this noble international grape variety, which expresses all its elegance and freshness in this area. It is no coincidence that the Cormòns area, with its marly soil and favourable climate, is considered one of the best areas in the world for growing this grape variety. The grapes are harvested by hand in the coolest hours of the morning to preserve their integrity. In the cellar, they undergo soft pressing, and the free-run juice, the most prized part of the juice, is fermented at a controlled temperature. Finally, the wine is aged on its fine lees for at least 8 months. This process gives it structure, complexity and a pleasant roundness. Doro Princic's Sauvignon has a straw yellow colour with greenish reflections, a sign of its freshness and vitality. The nose is aromatic and delicate, with notes of exotic fruit such as pineapple, followed by peach and sage. The palate is elegant and velvety, with good body and a pleasant drinkability that make it enjoyable and versatile. Designed to be enjoyed young, it has excellent ageing potential, allowing it to develop further aromatic nuances if stored correctly for 5-10 years. It is already perfect for accompanying fish dishes, especially shellfish and lean fish, but it also goes well with seafood appetisers, delicate risottos and fresh cheeses.
