Sauvignon Friuli Colli Orientali DOC 2022

There are few white wines that can stand up to pairing with savoury dishes like asparagus. And this Colli Orientali del Friuli DOC Sauvignon proposed by Ronco dei Pini belongs to this noble elite. Manual harvesting, vinification in temperature-controlled stainless steel tanks and ageing of the wine for about 6 months on the noble yeasts with frequent battonage are the ingredients of a white wine that does not need to be aged in wood to show its full potential. In the glass it has a beautiful bright yellow colour. The nose is amazing for the quality of its bouquet, intriguing, fine and elegant, with clear notes of white flowers, the classic and inevitable tomato leaf and pepper. In the mouth, however, it is dry and intense. It enjoys a distinct acidity that makes it particularly pleasant and easy to pair. With asparagus, it has been said, but also with mushroom dishes and classic spicy ethnic cuisine.
