A Friulian white wine that defies time, born from a historic cru and meticulous vinification. But let's proceed in order. We are in the heart of the Friuli plain, between the Alps and the Adriatic Sea. Here lies Tenuta Ca' Bolani, a winery located in Cervignano del Friuli, in the province of Udine. This area, rich in history and winemaking tradition, benefits from an ideal microclimate for growing grapes, thanks to its proximity to the sea and the protection of the mountains. Opimio is a pure Pinot Bianco, produced from a single vineyard located in Ca' Vescovo. The soil has a medium texture with well-drained gravelly layers, which give the wine a distinct minerality. Its vinification is characterised by manual selection of the best bunches, harvested in small 13-15 kg crates. The grapes are kept at a low temperature to preserve their aromas, before undergoing soft pressing. The free-run juice ferments in 25-hectolitre elliptical oak barrels at a controlled temperature. This is followed by 8 months of ageing on the lees and a further 6 months in the bottle. Bright straw yellow in colour with golden reflections, the nose reveals spicy and mineral notes, followed by hints of acacia blossom and liquorice wood. On the palate, it is full, round and enveloping, supported by a pleasant acidity and a mineral sapidity that balances the sweet notes of acacia honey. Thanks to its structure and beautiful complexity, Opimio has an ageing potential of 10-15 years, during which it develops further aromatic nuances.
