Venezia Giulia IGT Ribolla Gialla di Ca'Bolani comes from Cervignano del Friuli (UD), a land kissed by the sun and caressed by the Adriatic breeze. Here, the historic Zonin family passionately cultivates Ribolla Gialla grapes, which give life to this wine with its unmistakable personality. This area, which has always been a meeting point for different cultures, offers an extraordinary diversity of microclimates and soils, ideal for the cultivation of native and international grape varieties. Ribolla Gialla, in particular, finds its ideal terroir in this corner of Friuli, where it expresses its unique characteristics to the fullest. In the Ca'Bolani vineyards, this native variety produces prized fruits that give rise to fresh and fragrant wines. In the cellar, the grapes are processed with great care to preserve their freshness and aromas. After soft and delicate pressing, the must ferments in temperature-controlled stainless steel tanks. This vinification method enhances the fruity and floral notes typical of the grape variety. Subsequent ageing on the lees contributes to enriching the wine's complexity and giving it greater roundness on the palate. Bright straw yellow in colour, anticipating its liveliness, this Ribolla offers a fresh and fragrant bouquet on the nose, with intense aromas of white fruits such as apple and pear, delicate citrus notes reminiscent of grapefruit and hints of elegant white flowers. On the palate, it is fresh and lively, with a pleasant sapidity that enhances its drinkability. The finish is harmonious and pleasantly persistent, with an aftertaste that recalls the fruity notes perceived on the nose. On the table, it loudly evokes the flavours of the sea. An excellent aperitif, it should be tried with a sauté of clams or a seafood risotto.
