    • Vinification The vines are trained on espaliers and pruned using the Guyot method. Green management is very important and is carried out manually and with meticulous care. The leaves are removed by hand from the base of the bunches to promote a drier and healthier microclimate. Furthermore, leaf removal is carried out only on the east-facing side to promote sunlight when the sun is less intense, thus preserving the aromas. The soil is worked in both rows to avoid competition between the vines and wild grasses, allowing us to obtain higher acidity in the grapes.

"Aquilis" Sauvignon Friuli Aquileia DOC 2018
    • Aquilis is born between the breezes of the Adriatic Sea and the gravelly soils of Cervignano del Friuli. A Sauvignon that embodies the elegance and complexity of the noble Bordeaux grape variety. Produced by Ca' Bolani, the Zonin family estate, this wine is a tribute to the historic city of Aquileia, formerly known as “Aquilis”, an important wine-growing centre in the Roman Empire. Here, the microclimate is influenced by the proximity to the sea. It offers cool summers and mild winters, ideal for growing Sauvignon Blanc. The medium-textured soils with draining gravel layers contribute to the wine's minerality and freshness. After harvesting, the grapes are kept at a low temperature to preserve their aromas. Fermentation takes place in 25-hectolitre elliptical oak barrels, followed by 8 months of ageing on the lees and a further 6 months in the bottle. In the glass, Aquilis is bright straw yellow with emerald reflections. The nose reveals notes of sage, elderflower, pink grapefruit and Sorrento lemon, creating a complex and intense bouquet. On the palate, the wine is balanced, with a pleasant sapidity and harmonious acidity that gives it freshness without aggression. The nose and palate are perfectly aligned, with an intense aromatic finish. Aquilis has an ageing potential of around 10-15 years, although it is already delicious today. It is best served with fish appetisers, first courses with delicate sauces, shellfish, scampi, prawns, lobster and crayfish. For those who enjoy unusual pairings, thanks to its freshness and beautiful complexity, Aquilis can also be served with white meats. Finally, it is excellent with asparagus.

In the heart of Friuli Venezia Giulia, Ca' Bolani is a benchmark for the Aquileia DOC and one of the largest estates in northern Italy. Surrounded by over 999 cypress trees, it covers 570 hectares of vineyards in a unique area between the Alps and the Adriatic Sea. Founded in the 16th century and now part of the Zonin group, the estate combines centuries-old tradition and innovation. This is where fresh, elegant and aromatic wines are produced, such as the famous Sauvignon Aquilis and Refosco Alturio. The ideal microclimate and biodiversity make each label an authentic expression of the territory. Ca' Bolani is also wine tourism, with itineraries through the vineyards, the winery and unforgettable tastings.
