Aquilis is born between the breezes of the Adriatic Sea and the gravelly soils of Cervignano del Friuli. A Sauvignon that embodies the elegance and complexity of the noble Bordeaux grape variety. Produced by Ca' Bolani, the Zonin family estate, this wine is a tribute to the historic city of Aquileia, formerly known as “Aquilis”, an important wine-growing centre in the Roman Empire. Here, the microclimate is influenced by the proximity to the sea. It offers cool summers and mild winters, ideal for growing Sauvignon Blanc. The medium-textured soils with draining gravel layers contribute to the wine's minerality and freshness. After harvesting, the grapes are kept at a low temperature to preserve their aromas. Fermentation takes place in 25-hectolitre elliptical oak barrels, followed by 8 months of ageing on the lees and a further 6 months in the bottle. In the glass, Aquilis is bright straw yellow with emerald reflections. The nose reveals notes of sage, elderflower, pink grapefruit and Sorrento lemon, creating a complex and intense bouquet. On the palate, the wine is balanced, with a pleasant sapidity and harmonious acidity that gives it freshness without aggression. The nose and palate are perfectly aligned, with an intense aromatic finish. Aquilis has an ageing potential of around 10-15 years, although it is already delicious today. It is best served with fish appetisers, first courses with delicate sauces, shellfish, scampi, prawns, lobster and crayfish. For those who enjoy unusual pairings, thanks to its freshness and beautiful complexity, Aquilis can also be served with white meats. Finally, it is excellent with asparagus.
