"Mock" Sauvignon Alto Adige DOC 2023

There are grapes that do best when grown in cool climates. Among these, the Sauvingon Blanc is one of the most popular. When the climate is cool and the environment is right, this grape is able to develop fine and very typical aromas. It is no coincidence that it is defined as an aromatic grape and is usually processed at low temperatures, to preserve the best aromas, and exclusively in steel. Cantina Bolzano is no exception, offering this pleasant Mock made only from Sauvignon grapes grown on the steep vineyards surrounding the city. In the glass, it is a beautiful straw yellow colour with greenish reflections. Intense aromas of tomato leaf and nettles, green peppers, mint, yellow peach and pink grapefruit, acacia and elderberry. A bouquet so intense and rich that it surprises even the most experienced and knowledgeable tasters. In the mouth, then, we find many of the fruity notes perceived earlier, with a fresh feeling that balances the whole and makes the wine, if possible, even more drinkable. Good structure and persistent aftertaste.
