    • Sensations Golden in colour with a fine, persistent perlage. The nose is delicate with dominant notes of citrus and apple. The palate is fresh with a distinct mineral character and a toasty finish.
    • Vinification Apollonis produces its “Meunier” champagne by vinifying the Meunier grapes grown in the village of Festigny, on the left bank of the Marne Valley, from vines with an average age of 45 years. The vineyard is certified Haut Valeur Enviromental and is characterised by clayey soil with a much higher concentration of limestone than neighbouring villages. The grapes are harvested by hand and, after pressing, the must ferments in enamelled concrete tanks. Once malolactic fermentation is complete, the wine is blended with 50% reserve wines, aged using the Solera method, and then bottled for the second fermentation and refermentation in the bottle. The Champagne rests on its lees for 24 months, followed by disgorging and dosage, which sets the residual sugar content at 8 grams per litre.

    • Where bubbles meet music, this is where Champagne Apollonis Composition is born. We are located - obviously - in the heart of the Vallée de la Marne, in Festigny. This is where Michel Loriot's Composition comes to life, a unique cuvée that perfectly represents the harmony between the winemaking tradition and musical passion of this family of winemakers. Festigny is a small village located in the Vallée de la Marne, one of the main regions of Champagne. Here, the chalky soil and temperate climate create ideal conditions for growing Pinot Meunier, the grape variety that symbolises the area. The Loriot family cultivates 7 hectares of vineyards, with a particular focus on sustainability and respect for the environment. This cuvée in particular is made from a blend of Pinot Meunier (40%), Chardonnay (40%) and Pinot Noir (20%), where the former mainly contributes freshness and fruity notes, the Chardonnay brings elegance and minerality, while the Pinot Noir gives structure and depth to the wine. Michel Loriot is known as the “music-loving winemaker” for his unique practice of using classical music during the production stages. The melodies of Beethoven, Mozart and Vivaldi accompany the vines and the wine, positively influencing both the growth of the plants and the fermentation process. This approach, known as proteodia, aims to improve the quality of wine through sound vibrations. Composition has a golden colour with a fine, persistent perlage. The nose reveals citrus and apple aromas with a toasted finish. On the palate, it is fresh with a distinct mineral character and a pleasant acidity that invites you to take another sip. Already good today, thanks to its structure and complexity, Composition can easily evolve in the bottle for over 10 years, developing aromatic nuances and greater depth of flavour. Ideal as an aperitif, it pairs well with fish and shellfish dishes. Try it with crab and lobster, or even with simple steamed fish. Finally, it is excellent with roast duck and goat's cheese.

      In Festigny, Marie Petit Loriot's family has been dedicated to promoting the natural characteristics of its terroir, its vines and its wines for twelve generations. Marie, an oenologist, her husband Alban, who is in charge of production, and her parents Martine and Michel Loriot have created a range of Champagnes that beautifully express the unique characteristics of their terroir. For this reason, they use classical music to stimulate the yeasts during ageing in the cellar.
