Champagne Brut Passé Composé by Fumey-Tassin is a product of the Côte des Bar, the other Champagne region, less well known but no less high in quality. The Passé Composé cuvée is an emblematic example of this, the result of a combination of two grape varieties: Pinot Noir (60%) and the rare Pinot Blanc Vrai (40%). But let's proceed in order. The Côte des Bar, located in the department of Aube, is characterised by rolling hills and clay-limestone soils with a Kimmeridgian subsoil, similar to that of Chablis. This area, less well known than the Montagne de Reims or the Côte des Blancs, offers ideal conditions for growing Pinot Noir and less common grape varieties such as Pinot Blanc Vrai, which adds freshness and finesse to the wines. At Maison Fumey-Tassin, the grapes are harvested by hand, with selection directly in the vineyard. Vinification involves low-pressure pressing, temperature-controlled alcoholic fermentation and complete malolactic fermentation. The wine then matures for 36 months on the lees in the Maison's cellars and, after disgorging, receives a dosage of between 4 and 7 grams per litre of sugar. Passé Composé has a golden yellow colour and a fine, persistent perlage. The nose reveals notes of fresh yellow fruit, while the palate is characterised by a lovely fruity character. Structured, mineral and fresh, it is elegant and harmonious on the palate. This Champagne is versatile in terms of food pairings. It is ideal as an aperitif and goes well with appetisers, foie gras, poultry, vegetables, fresh cheeses and fruit-based desserts.

Founded in 1983 by Marie and François Tassin, the winery has its roots in the region's wine-growing history, continuing the work begun by Marcel Tassin, one of the first Récoltant-Manipulants in the Aube region after the winegrowers' revolt of 1911. Today, the winery is run by Marie Tassin and her children, Arthur and Léa Fumey, who combine tradition and innovation to produce high-quality Champagne. The estate's vineyard covers 5 hectares of clay-limestone soils with Kimmeridgian subsoil, cultivated according to the principles of sustainable agriculture, with practices such as grass cover, sexual confusion and the integration of lunar cycles. In the countryside, Pinot Noir accounts for 90% of production. Together with the rare Pinot Blanc Vrai, it makes up the remaining 10%. The latter is mainly grown in Celles-sur-Ource and the neighbouring villages and is a real rarity in Champagne, with less than 100 hectares planted in the entire region. The Maison is certified “Haute Valeur Environnementale” (HVE) and “Viticulture Durable en Champagne”, and is a member of the Vigneron Indépendant association, demonstrating its commitment to responsible, quality viticulture.
