    • Sensations To the eye, it is a light, bright gold with coppery reflections reminiscent of the warm light of a winter sunset. The perlage is fine, continuous and persistent: a veritable shower of microbubbles that enhances the brilliance of the glass. On the nose: elegant and deep. It opens with notes of quince, ripe pear and candied citrus fruits, followed by hints of chestnut honey and toasted almonds. The passage in wood gives subtle nuances of vanilla and sweet spices, which intertwine with hints of bread crust and hazelnut. The attack is dry and decisive, typical of Brut Nature, but the balance is masterful. The structure of Pinot Noir is fully perceptible: creamy, enveloping, with a freshness that balances the tension and prolongs the persistence on the palate. The finish is mineral and slightly smoky, with hints of dried fruit and orange peel.
    • Vinification Pinot Noir grapes are harvested by hand and fermented with indigenous yeasts. The base wine is aged for about 12 months in used oak barrels, acquiring complexity and structure. This is followed by the second fermentation in the bottle, with maturation on the lees for about 24 months under natural cork. The dosage is zero (Brut Nature), to enhance the purity of the fruit and the mineral signature of the Pays Aubois.

    • A name that is already an invitation: Soirée d'Hiver. It is born in the quiet heart of the Côte des Bar, where Pinot Noir finds its most authentic voice. A pure Brut Nature, without filters or unnecessary sweetness. Only the truth of the fruit and the Kimmeridgian soil, naked and fascinating. In the glass, it shines like a frosty evening lit by golden candles. The nose is elegant and mysterious: quince, hazelnut, candied citrus. On the palate, it is a tense, vibrant caress, with a mineral finish that never ends. It is a Champagne that makes no noise but leaves its mark. It speaks of time, balance and instinctive elegance.       Thibaut and Alizée Tassin are a young couple of winemakers who represent the new generation in the Champagne region. Their story begins with a generational change, not without compromise with their parents, culminating in 2019 with the decision to start a new business on their own. Thanks to an advance on their inheritance, they obtained just over a hectare of vineyard divided between two plots in Celles-sur-Ource. In love and full of enthusiasm, they also found an old farmhouse in Landreville, which they converted into a base and cellar. Their choices in the vineyard are guided by a deep respect for nature. Soil analysis and observation are essential to understanding how best to work. The native flora growing among the vines is carefully studied to promote biodiversity and natural balance. The approach in the vineyard is therefore bio-integral: pruning that follows the flow of sap, soil cultivation without the use of chemicals and fertilisation with organic compost only. The conversion to organic farming began in 2021. Today, the estate has around 3 hectares of vineyards and produces 14,000 bottles. Although small, they have already won the appreciation of critics and enthusiasts.
