  • The appellation is Champagne AOC. Type, Brut Nature. Producer, Ayala. These three elements might be enough to intrigue many enthusiasts. What is certain, in fact, is that in this case we are in the presence of an important bottle, capable of giving many, many satisfactions. But let's proceed in order. 40 percent Chardonnay, 40 percent Pinot Noir and 20 percent Meunier, the grapes used to make this sparkling wine come from vineyards located in all areas of Champagne, Côte des Blancs, Montagne de Reims and Vallée de la Marne, Aube and Côte de Sézanne. Characterized by deliberately prolonged autolysis, it best reveals the exceptional quality of the grapes. The decision not to add dosage at disgorgement also allows this cuvée to express its full potential, without artifice. Each individual parcel is vinified separately, and is assembled only later when it is time to bring the final cuvée to life. The second fermentation, in the bottle, involves resting on the lees for at least 48 months. Bright gold color with silver reflections, the nose offers discreet fruity notes, an elegant floral touch and hints of citrus. In the mouth, the attack is lively, with a delicate but well-present effervescence. Fruity notes, a touch of minerality and memories of freshly cut grass are found. This elegant Brut Nature pairs perfectly with all flavor-rich dishes, from oysters to sea urchins to caviar.
