We are in Chavot-Courcourt, a charming little village in the renowned Vallée de la Marne. Here, the historic Chavost cooperative, founded in the years immediately after the Second World War, chose to turn the page by embracing a bold and innovative philosophy. Fully organic viticulture is practised, with vines rooted in chalk-rich, mineral soils. This deep connection with the land translates into profound respect for biodiversity, producing Champagnes of genuine character. In a region dominated by major Champagne houses, Chavost's decision to craft an entirely natural range, free from chemical intervention, is truly exceptional, proving that even the greatest classics can possess a wild yet elegant soul. This cuvée is born from the perfect union of Chardonnay and Pinot Meunier. Chardonnay contributes freshness and natural finesse, while Pinot Meunier brings generous structure, ripe fruit flavours and the characteristic roundness that makes every sip irresistible. Only the "tête de cuvée", the very first and finest juice from the pressing, is used. In the cellar, the philosophy is one of minimal intervention. Both alcoholic and malolactic fermentation occur spontaneously thanks solely to indigenous yeasts and bacteria, without the addition of sulphur dioxide. Seventy percent of the wine ferments in temperature-controlled stainless steel tanks to preserve freshness, while the remaining thirty percent matures in French oak barrels, adding depth and complexity. For the secondary fermentation, concentrated grape must is added. Before bottling, the wine undergoes no fining and receives no dosage after disgorgement, presenting itself as a pure, uncompromising Brut Nature. Golden and brilliant, with a fine, persistent mousse, the nose is immediately expressive, revealing aromas of ripe apple, Tarte Tatin and almonds, enriched by subtle bakery notes and a delicate touch of evolution. On the palate it is vinous and opulent, combining impressive structure with enveloping smoothness and outstanding balance that encourages another sip. Already delicious today, thanks to Chardonnay's vibrant acidity and the complexity provided by partial oak ageing, this cuvée also offers excellent ageing potential. At the table it proves wonderfully versatile, pairing beautifully with richly flavoured dishes. Try it with butter-seared scallops, where the richness of the shellfish perfectly complements the wine's vinous depth. It is equally outstanding with Fassona beef tartare or porcini mushroom risotto.
