    • The Blanc de Blancs Champagne by Maison Daubanton & Fils is a pure and luminous tribute to French elegance. A sparkling wine that makes precision and finesse its defining traits, without unnecessary embellishment. We are once again in the Côte des Bar, a part of Champagne that never ceases to surprise. Here, in Ville-sur-Arce, the soil is an open-air archive of the Jurassic period. The Kimmeridgian terroir, composed of calcareous marl and tiny oyster fossils known as Exogyra virgula, acts like a natural sponge, retaining water and delivering a sharp, vibrant freshness to the vines. Maison Daubanton, which tends its vineyards with the care of a family garden, has chosen to focus on this specific terroir to demonstrate that even in the land of Pinot Noir, Chardonnay can reach remarkable levels of refinement. The vines, benefited by constant ventilation that keeps humidity at bay, produce healthy and lively grapes. The wine is vinified and aged on fine lees for 9 months in oak barrels and undergoes malolactic fermentation to add roundness and creaminess before the second fermentation and long ageing on the lees. This resting period allows the bubbles to integrate perfectly into the wine’s structure, becoming as fine as a string of pearls. In the glass, it shows a bright straw yellow colour with almost silvery reflections. On the nose, a delicate bouquet of jasmine, citron and green apple, followed by mineral hints of flint and fresh almond. On the palate, it is pure freshness. The attack is clean and precise, with a savoury edge that extends the sip and makes it highly drinkable, finishing with subtle notes of bread crust. At the table, this Champagne is the ideal companion for lovers of seafood flavours.

Here the landscape changes: the hills become gentler, the climate takes on a slight continental influence, and the soils are rich in marl and limestone, very similar to those found in neighbouring Burgundy. This is a “frontier” territory, where Pinot Noir finds an extraordinary expression, producing wines that are structured, generous and marked by a deep, distinctive minerality. The story of Maison Daubanton & Fils is relatively recent, yet solid. In 1982, Monique and Jean-Jacques Daubanton decided to plant their first vines in Rizaucourt. Since then, growth has been steady, respecting the rhythm of nature to bring the soul of the vineyard into the glass. Today, the estate is a fully family-run operation, where savoir-faire is passed down from one generation to the next. In the vineyard, the family manages its plots with a strong focus on sustainability. While Pinot Noir is the undisputed star of the area, the Daubanton family also skilfully works with Chardonnay, for its elegance and freshness, and Pinot Meunier, which brings fruit-driven notes and immediacy.
