    • When the going gets tough... In Champagne you start playing. And you do it with the best weapons to bring home the right result. In this case, for example, the grapes used to make this Champagne come from just three plots, from three villages classified as Premier Cru. We are talking about Pierry, Dizy and Vertus. But that is not enough. In addition to the quality of the raw material, Sélèque's Champagne Solessence Nature is also the result of a long resting period on the lees, which gives the wine fruity aromas on the nose and ripe aromas on the palate. The Cuvée in this case is composed of 50% Chardonnay, with 40% Pinot Meunier and 10% Pinot Noir. The bases are processed 70% in stainless steel, while the remainder matures in oak barrels. The style of the winery is also given by the bottling without filtration or ageing. In the glass, this Champagne reveals itself as a refined symphony, a wine with its own perfect natural balance. It is the Champagne to offer without hesitation when paired with seafood but also, and probably above all, when the dish is particularly savoury. For fans of fusion cuisine, in particular, it is the bubble that never disappoints with any combination. Even the most daring ones.

      Vallée de la Marne. One of the renowned areas of Champagne. This is where J-M Sélèque operates. It is located in Pierry, Coteaux Sud d'Epernay, i.e. south of the capital of Champagne. It is a small RM, i.e. a 'Récoltant Manipulant', a winegrower who produces and markets Champagne under his own label, only from grapes from his own vineyards, and processed in his own cellars. Specifically, Sélèque has 9 hectares of property, divided between Chardonnay, 50%, Pinot Meunier, 40%, and Pinot Noir for the remainder. In total, this amounts to a production of around 100,000 bottles, all of which are very enjoyable. The history of the winery began in 1965, when Henri Sélèque planted the first vines. His son, Richard, joined the company only a few years later, in 1974, after graduating in oenology. The other crucial step came in 2008, when Jean-Marc, the founder's grandson, took over the company. He is credited with renewing the style of the house, learning from the past to interpret contemporary taste.
