Cuvée Signature was created precisely to celebrate this territorial excellence through a solid and focused blend. Pinot Noir is the undisputed master of the house and makes up the predominant percentage of the assemblage, bringing power and vinosity. It is accompanied by Chardonnay, whose role is to bring light, finesse and vibrant verticality to the sip. The harvest is carried out entirely by hand and involves a meticulous selection of the best bunches. Most of the must ferments in temperature-controlled stainless-steel tanks to preserve the pure expression of the fruit. A small part of the base wines, however, passes through oak barrels. This choice serves to give greater aromatic complexity. Malolactic fermentation is carried out in full, smoothing the sharper edges of the wine and ensuring an enveloping roundness. After tirage, the real magic begins. The bottles rest in the dark on the lees for a period of between four and eight years. This is an extremely long wait that allows the development of a remarkably fine profile. Visually, a fine and silky perlage stands out. On the nose, warm aromas of cooked pear and yellow peach intertwine with hints of star anise and ripe citrus fruit. Within moments, warm notes of freshly baked brioche begin to emerge. On the palate, it is broad, creamy and decidedly enveloping. The important structure and vinosity are balanced by a marked saline imprint. The finish stretches out with elegance and minerality, offering a persistence that recalls dried fruit and toasted bread. Its characteristics make it a distinctly gastronomic Champagne, suitable for the whole meal.

The Maison also deliberately chooses to let its cuvées rest on the lees in the cellar for a period ranging from 5 to 8 years.
