    • Sensations Golden yellow in colour, the nose reveals notes of pear and melon with a hint of fresh butter. On the palate, it is vibrant, a beautiful combination of very pronounced freshness and savouriness, softened by some fruity notes. The finish is decidedly persistent and pleasant. Raw fish dishes are an obvious pairing.
    • Vinification Apollonis produces its “Meunier” champagne by vinifying the Meunier grapes grown in the village of Festigny, on the left bank of the Marne Valley, from vines with an average age of 45 years. The vineyard is certified Haut Valeur Enviromental and characterised by clayey soil with a much higher concentration of limestone than neighbouring villages. The grapes are harvested by hand and, after pressing, the must ferments in enamelled concrete tanks. Once the malolactic fermentation is complete, the wine is blended with 50% reserve wines, aged using the Solera method, and then bottled for the second fermentation and refermentation in the bottle. The Champagne rests on its lees for 24 months, followed by disgorging and dosage, which sets the residual sugar content at 8 grams per litre.

    • Today we are in the heart of the Marne Valley, in Festigny to be precise. This is where a unique Champagne is produced, Michel Loriot's Apollonis Meunier. A cuvée born of a wonderful terroir and a great passion, that of the winemaker for music. Curious? Festigny is a small village located in the Marne Valley, one of the main regions of Champagne. The soil here is chalky and the climate is temperate. These are ideal conditions for growing Pinot Meunier, the grape variety that symbolises the area. In Festigny, the Loriot family cultivates 7 hectares of vineyards, with a particular focus on sustainability and respect for the environment. Pinot Meunier, often underrated, is used here in its pure form, revealing all its elegance and complexity. Michel Loriot is known as the “music-loving winemaker” for his unique practice of using classical music during the production process. The melodies of Beethoven, Mozart and Vivaldi accompany the vines and the wine, positively influencing the growth of the plants and the fermentation of the wines. This approach, known as proteodia, aims to improve the quality of the wine through sound vibrations. Apollonis Meunier has a golden colour and a fine, persistent perlage. The nose immediately reveals aromas of pear, melon and a hint of fresh butter. On the palate, it is fresh, savoury and lively with a long, persistent finish. This Champagne is ideal as an aperitif but also finds its place at the table.

      In Festigny, Marie Petit Loriot's family has been dedicated to enhancing the natural characteristics of its terroir, its vines and its wines for twelve generations. Marie, an oenologist, her husband Alban, who is in charge of production, and her parents Martine and Michel Loriot have created a range of Champagnes that beautifully express the unique characteristics of their terroir. Michel and his daughter Marie are also firm believers in proteodics, a theory that specific musical waves can influence protein production. For this reason, they use classical music to stimulate the yeasts during ageing in the cellar.
