    • Sensations Pale ruby red with purple reflections. Typical notes of ripe strawberry, rose and candied violet with an elegantly smoky tone. Lots of red fruit with balsamic tones on the palate.
    • Vinification The grapes were harvested by hand and transported to the winery in small carts. Once in the cellar, they were crushed and destemmed, then sent to 114 and 150 hl steel tanks. The grapes were stirred three times a day with very short pumping over - between 10 and 20 minutes - depending on the stage of fermentation, in order to respect the skins and fruit as much as possible. Fermentation lasted 7-8 days, with the temperature maintained at around 12-13°C in the early stages. As fermentation drew to a close, refrigeration was suspended and the final stages of alcohol fermentation took place at temperatures of 24-25°C. Once fermentation was complete, the skins remained in contact with the wine for 10-13 days before being racked. Malolactic fermentation took place in the same tanks; once complete, between December and January, after racking following malolactic fermentation, ageing began, again in 114 hl and 150 hl steel tanks.

    • Vittoria DOC Frappato di Planeta, a red wine light in tannins but strong in character. We are in Acate, 70 metres above sea level. Dunes of fine sand lie on top of a layer of tuff, which acts like a sponge, retaining moisture during the driest months. The temperature variations are not those of high mountains, but the salty breezes caress the rows of vines and keep the grapes healthy. In the countryside, the “case cubane” (Cuban houses) still stand, stone huts built dry by labourers in the 19th century: tiny fortresses against the heat, which today watch over meticulously tended organic vineyards. 100% Frappato, here the sparse bunches and thin skins give unique floral aromas, while the sand favours silky tannins. The vines are trained on espaliers, with high density and low yields. Harvesting is done by hand, using refrigerated crates. In the cellar, the grapes are gently destemmed and fermented in steel tanks. After 7-8 days of fermentation and 10-13 days of maceration, malolactic fermentation and ageing continue, always in steel, until bottling. Bright ruby red with violet reflections, the nose is very reminiscent of rosehip, candied violet and a hint of smoke. Then raspberry, pomegranate and lemon thyme. On the palate, it is agile, with a fresh and crisp attack of wild strawberries. The tannins are very fine, while the finish, salty and balsamic, leaves the mouth clean. Best enjoyed young, it can easily age for 3-4 years in the cellar. It can be served with spaghetti all'amatriciana, where the acidity of the tomato finds a natural balance in the freshness of the Frappato, or with a delicious cheeseburger with caramelised onions.

Each site is a bastion of biodiversity and a micro-winemaking laboratory, because “every soil deserves its own voice”. Respect for the environment is the other pillar. From 2022, the entire range will be certified organic. In addition, Planeta adheres to the SOStain protocol, the first sustainability standard designed for Sicilian viticulture. The “Planeta Terra” project goes even further: lighter bottles produced 100% on the island, energy from renewable sources, reforestation of Mediterranean scrub and permanent vegetation cover between the rows.
