    • Sensations A compact ruby colour, rich in sweet blackcurrant and candied violet, alternating with thyme and lavender, it cannot go unnoticed by the palate of a refined taster or a novice enthusiast. It is a multifaceted and intriguing red that combines pleasant tannins with extraordinary length on the palate.
    • Vinification The Merlot grapes from the Ulmo vineyards were harvested by hand, placed in 15 kg crates and transported immediately to the winery, where they were crushed and destemmed, and the crushed grapes were placed in steel tanks where alcoholic fermentation began. The grapes were stirred two to three times a day with very short pump-overs - between 15 and 20 minutes - depending on the stage of fermentation, in order to respect the skins as much as possible and thus enhance the complexity of the wine. Fermentation lasted 6-8 days, with the temperature maintained at around 16 °C in the early stages, 20-22 °C in the second stage and finally, as it drew to a close, 25-26 °C, when the cooling was stopped. Once fermentation is complete, the wine is racked, clarified and transferred to French oak barriques for 14 months of ageing. Malolactic fermentation takes place entirely in barriques. Ageing in Allier oak barriques, 50% new, 25% second use, 25% third use.

    • There is an Arab castle that reappears as if by magic when the water level of Lake Arancio drops. It is the fort of Mazzallakkar, silent sentinel of these shores since 830 AD. Right here, amid reflections of water and salty breezes, Sito dell'Ulmo is born: a Merlot that speaks Sicilian dialect with an unmistakable Bordeaux accent. We are between Sambuca di Sicilia and Menfi. Here, the rows of vines destined for Ulmo stretch out at about 195 metres above sea level, on alluvial deposits rich in pebbles and limestone. The vineyards, planted in 1987 on the banks of an artificial basin created in the 1950s, enjoy cool nights that preserve the aromas and sunny days that ripen the tannins and colour. Ulmo is pure Merlot, no blends, no compromises. The Bordeaux clone shows an irresistible Mediterranean vein here, with ripe fruit and a discreet balsamic touch, while the low yield ensures concentration without losing elegance. The harvest is manual. The grapes are destemmed and left in contact with the skins for 14 days. They ferment at a controlled temperature and undergo malolactic fermentation in steel before spending 14 months in Allier oak barrels, half new and half second-use. The long ageing in wood softens the tannins without affecting the fruit, allowing it to express itself freely in the glass. In the glass, it shines with a dense ruby colour with purple reflections. The first impact on the nose offers blackcurrant, candied violet and thyme. Then, as the minutes pass, oxygen brings out notes of graphite, lavender and a hint of cocoa. The palate is dense but smooth. The sweet attack of blackberry quickly gives way to a savoury, almost marine suggestion. The long, layered finish intertwines black cherry, liquorice and hints of Mediterranean herbs. Already enjoyable today, this wine is designed to evolve positively in the cellar. If well preserved, it can certainly be laid down for 12-15 years, waiting for the right occasion. With time, the fruity character transforms into nuances of sweet tobacco, undergrowth and a slight hint of iron, perfect for those who love red wines that continue to evolve.

Each location is a bastion of biodiversity and a micro-winemaking laboratory, because “every soil deserves its own voice”. Respect for the environment is the other pillar. From 2022, the entire range will be certified organic. In addition, Planeta adheres to the SOStain protocol, the first sustainability standard designed for Sicilian viticulture.
