    • Sensations Bordeaux made in Sicily from a selection of the best grapes from the company's vineyards. A powerful red, built on a dense and important tannic structure, balanced by a decisive alcohol content. The flavour is focused on a very dense and pulpy ripe fruitiness. The flavours are those of blueberries and black cherries in alcohol, mixed with leather, while intense aromas of cherries, cocoa, iodine and rosemary gradually emerge.
    • Vinification The Cabernet Sauvignon grapes from the Tunno Vecchio vineyards were harvested by hand and placed in 15 kg crates; they were immediately transported to the winery, where they were crushed and destemmed; the crushed grapes were placed in steel tanks, where alcoholic fermentation began. The grapes were stirred twice a day with very short pumping over - between 10 and 15 minutes - depending on the stage of fermentation, in order to respect the skins as much as possible and thus enhance the complexity of the wine. Fermentation lasted 6-8 days, with the temperature maintained at around 15-16 °C in the early stages, 20-22 °C in the second stage and finally, as it drew to a close, 26-27 °C, with the cooling process being interrupted. Once fermentation was complete, the tanks were topped up with wine from the same vineyard of origin, followed by targeted maceration for 12-15 days with the cap submerged (skins in contact with the wine) and then racking. During the twelve days of maceration, the temperature was regulated at around 20-22 °C to promote the dissolution of O² in small fractions - through micro-oxygenation - in order to improve the structure and stabilisation of the anthocyanins. Malolactic fermentation took place in steel tanks; at the end, the wine was racked, clarified and transferred to French oak barriques for 16 months of ageing. Ageing: 100% in first-use Allier oak barriques.

    "Burdese" Menfi DOC 2020
    • ‘Burdese’ means ‘Bordeaux’ in Sicilian dialect. This alone is enough to reveal the cosmopolitan nature of this Planeta red wine. It is an entirely island-based interpretation of the classic Bordeaux blend. The vineyards are divided between the Dispensa district, a few kilometres from the sea, and the higher Maroccoli district, which reaches 430 metres above sea level. From these hills, once frequented by Phoenician and then Greek traders, small batches of grapes arrive today, keeping alive the spirit of exchange of the south-western coast. The base cuvée of Burdese is composed of 70% Cabernet Sauvignon, which provides structure, dark fruit and tannins, and 30% Cabernet Franc, which adds balsamic freshness and a characteristic herbaceous note. The two parcels are harvested manually in early September. The grapes are first destemmed and then fermented separately in steel tanks. This is followed by maceration on the skins and complete malolactic fermentation. Finally, the wine is aged for 14 months in French Allier barriques, almost all of which are new. This is a deliberate stylistic choice that helps to soften the tannins, adding hints of cocoa and liquorice. A further year in the bottle completes the ageing process before release. In the glass, it has a beautiful dense ruby colour with purple reflections. The nose reveals blackcurrant, plum in alcohol and hints of graphite. As the minutes pass, oxygenation in the glass brings out notes of rosemary, leather and dark chocolate. The attack on the palate is full, almost creamy, balanced by an acidic backbone that lengthens the finish towards a salty-balsamic finish, marked by Mediterranean herbs and an echo of black cherry. Already good today, thanks to its dense tannins and high concentration, Burdese promises a cellar life of 12-15 years. With time, it will develop tones of sweet tobacco, candied cedar and a slight ferrous note that will delight those who love complex evolutions.

From 2022, the entire range will be certified organic. In addition, Planeta adheres to the SOStain protocol, the first sustainability standard designed for Sicilian viticulture. The “Planeta Terra” project goes even further: lighter bottles produced 100% on the island, energy from renewable sources, reforestation of Mediterranean scrub and permanent vegetation cover between the rows.
