Merlot, Terre Siciliane IGT, produced by Mandrarossa, is a beautiful interpretation of this noble French grape variety. It originates in Menfi, Sicily, an area located on the south-western coast of the island characterised by clayey soils, with south-facing vineyards located between 100 and 300 metres above sea level. The climate here is decidedly Mediterranean, with hot, dry summers and sea breezes that promote optimal ripening of the grapes, giving the wine a balanced structure and intense aromas. 100% Merlot grapes, grown using organic methods, are harvested in the third week of August, when the grapes reach full phenolic ripeness, ensuring an optimal concentration of aromas and soft tannins. After harvesting, which is also done by hand, the grapes are destemmed and crushed. Fermentation and maceration take place for 6-8 days at a controlled temperature, using selected yeasts. The wine then matures for about 8 months in stainless steel tanks, preserving the freshness of the fruit and allowing the aromas to develop well. Intense ruby red in colour with violet reflections, the nose reveals an intense and persistent bouquet with hints of plums, quince, broom and rosemary. On the palate, it is savoury and warm, with an aftertaste of liquorice and notes of mulberries and wild asparagus. The structure is balanced, with soft tannins and good persistence. This Merlot pairs well with mature cheeses, roasted or braised red meats and game. It is also ideal with mushroom and legume dishes, typical of Mediterranean cuisine.
