    • Sensations Garnet red in colour, it expresses complex sensations of currants, blackberries, plums, spices and coffee on the nose. Full-bodied and well-balanced on the palate, thanks to elegant tannins and discreet freshness, which contribute to its persistence.
    • Vinification The grapes are destemmed and crushed, and the product obtained is left to macerate in small fermentation tanks, where contact between the skins and the must is constantly maintained through continuous pumping over. Maceration and fermentation last about 10-12 days at a temperature of 25-27°. Once maceration is complete, the wine is separated from the skins without pressing. The wine is then aged for 10-12 months in 50hl French oak barrels.

    • Sentiero delle Gerle, Etna Rosso DOC by Mandrarossa, originates on the north-eastern slopes of Mount Etna, precisely in Linguaglossa. Here, the territory is unique due to its volcanic composition and particular microclimate. This area is characterised by black soils rich in minerals and significant temperature variations between day and night. These are ideal conditions for growing Nerello Mascalese, a native Sicilian grape variety known for its elegance and complexity. The grapes are harvested by hand in the second half of October, expressing the best characteristics of the territory and giving life to wines of great finesse and longevity. In the countryside, the grapes are grown using the spurred cordon method and, after harvesting, are immediately destemmed and crushed. Fermentation takes place in medium-sized fermentation tanks, with maceration for 10-12 days at a controlled temperature. The wine is then aged partly in stainless steel and partly in oak barrels, with regular racking to ensure the stability and evolution of the product. In the glass, it has a garnet red colour with bright ruby reflections. The nose reveals complex aromas of blackcurrant, blackberry, plum, spices and coffee. On the palate, it is full and well-balanced, thanks to elegant tannins and moderate freshness. This Etna red wine pairs perfectly with roasted or braised red meats and cured meats. Its structure and complexity also make it ideal with rich Mediterranean dishes. Mandrarossa is a wine project that began in 1999 in the heart of south-western Sicily, in Menfi. It is the result of over twenty years of research into the terroir to identify the best combinations of grape varieties and territory.

      Founded by the Cantine Settesoli cooperative, Mandrarossa represents an innovative Sicily that breaks with stereotypes, with the aim of producing high-quality wines through sustainable practices and oenological experimentation. Located in the Puccia district south of Menfi, it is an example of architecture integrated into the landscape. The 700-square-metre building, spread over several levels and largely underground, houses a barrel cellar, two tasting rooms, a wine shop and a panoramic terrace overlooking the sea. Designed to blend in with its surroundings, the winery uses natural materials and colours that reflect the tones of the local area, such as wood and ochre pigments. The roof garden, covered with typical Mediterranean plants, acts as a natural insulator, helping to maintain ideal temperatures and humidity levels for ageing wines. The energy required is provided by a photovoltaic system, underlining the company's commitment to environmental sustainability. The company also stands out for its adoption of organic farming practices. Since 2021, it has been offering wines made from 100% organic grapes, sourced from vineyards cultivated without the use of synthetic products or GMOs, promoting biodiversity and the well-being of the ecosystem.
