    • We are in Montagny, the southernmost sentinel of the Côte Chalonnaise, a place where Chardonnay does not simply grow, but chooses to strip away every excess to reveal its purest soul. The Montagny 1er Cru by Olivier Leflaive is exactly that: a wine of subtle elegance, a wine that does not need to shout to be noticed, because its class lies in a refined and measured sobriety. The 1er Cru designation represents the highest qualitative level of the area. Unlike other AOCs, where only a few selected vineyards obtain the “Premier Cru” mention, in Montagny the classification is linked to strict criteria of altitude and exposure that reward the consistent quality of the most suitable slopes. Choosing a Premier Cru by Olivier Leflaive therefore means bringing home the highest expression of a terroir that has made precision its trademark, interpreted by one of Burgundy’s most authoritative names. The production is a masterpiece of balance between steel and wood. The grapes are processed as 100% whole bunches to guarantee the finest extraction, followed by a static settling of 24 hours. The ageing lasts 12 months and follows a very precise distribution: 75% matures in oak barriques (with a skilful 12% of new oak), 10% in larger oak casks and the remaining 15% in stainless steel tanks. The final 4 months of maturation take place entirely in stainless steel, a crucial technical step to “retension” the wine and restore the brilliance that wood tends to soften. On the nose, the Montagny 1er Cru reveals itself with aristocratic restraint: fine, delicate, dominated by notes of freshly blossomed white flowers and a hint of citron peel. On the palate, the surprise lies in its linear structure. Not an opulent wine, but a blade of light. Dense yet agile, with a flavour progression that flows straight towards a savoury finish. The quintessence of understated elegance, where every element is perfectly in place without ever overpowering the others. Its ageing potential is definitely interesting. Although it is ready to drink now, for those who wish to enjoy its floral freshness, this 1er Cru has the structure to evolve in the cellar over the next 6–9 years. Over time, its linearity will gain nuances of acacia honey and bread crust, while always maintaining the acidic backbone that ensures its drinkability. At the table it loves refined seafood cuisine.
