    • Vinification The vinification follows a clean style that respects the raw material. The Chardonnay grapes, hand-picked in the vineyards of Prissé, are gently pressed to preserve their freshness and natural aromas. Fermentation takes place with indigenous yeasts, partly in stainless steel and partly in large oak barrels, to maintain the balance between liveliness and roundness. After a period of ageing on the lees, the wine is bottled without aggressive filtration, so as to preserve all its purity and authenticity. The result is a vibrant, precise and mineral white wine, perfectly in line with the natural and artisanal philosophy of Maison Lafon.

    • This Chardonnay Mâcon Prissé from Les Héritiers du Comte Lafon is the perfect example of how a great winemaker can transform an undervalued territory into a gold mine of elegance. A wine that has redefined expectations of the Mâconnais. But let's proceed in order. We are in Burgundy, of course, but in its southernmost part, the Mâconnais, around the small town of Prissé. Here, the climate is slightly warmer than in the famous Côte d'Or and the soil is a mosaic of marl and limestone, which gives the wine a mineral tension that beautifully balances the natural roundness of Chardonnay. This pure white wine is made from hand-picked grapes that are immediately pressed gently. In the cellar, a style that could be described as “artisanal and respectful” is followed: fermentation starts spontaneously thanks to indigenous yeasts and takes place partly in stainless steel tanks to maintain liveliness, and partly in large oak barrels that give a minimal, calibrated roundness without overpowering. This approach reflects the philosophy of Maison Lafon: minimal interference for maximum expression of the fruit and soil. In the glass, this Mâcon Prissé catches the eye with its bright straw yellow colour, further enhanced by greenish reflections. The nose is a true explosion of elegance, where notes of lime and white peach blend with the subtle fragrance of wildflowers. The picture is completed by a delightful **mineral**, almost chalky touch, which adds finesse. On the palate, it is lively and harmonious. A sip that combines balanced softness with a fresh citrus vein. Thanks to its balanced structure and remarkable freshness, this wine has a discreet potential for evolution that goes well beyond immediate consumption. Let's uncork it alongside oysters and raw seafood, where the wine's savouriness and citrus notes amplify the iodine sweetness of the fish. It is also excellent with fresh goat's cheeses.

      If you are a lover of great Burgundy Chardonnays, the name Lafon will strike the right chord. Les Héritiers du Comte Lafon is a project born from the genius of Dominique Lafon with an ambitious goal: to demonstrate the value of southern Burgundy, the Mâconnais. The year was 1999. At the time, this area was famous for producing large volumes of white wine, but Dominique was interested in only one thing: absolute quality and the purest expression of the terroir. With this precise idea in mind, he founded his company, which today boasts around 26 hectares of vineyards, located in some of the most renowned areas such as Milly-Lamartine, Viré-Clessé and Pouilly-Fuissé. The first step in realising his vision was total respect for the vineyard. Right from the start, Dominique introduced certified organic cultivation and, in part, a biodynamic approach. No invasive treatments, only working in harmony with nature and the rhythms of the cosmos. This choice is not a fad, but a true philosophy to bring out the unique character of each individual plot. The same philosophy is rigorously applied in the cellar. Here, the main objective is to prevent excess wood from masking the message of the terroir. For this reason, Dominique and his team opt for spontaneous fermentation, guided by indigenous yeasts, and above all for ageing in large, neutral 500-600 litre wooden barrels. Today, the baton of quality is firmly in the hands of the founder's children, Léa and Pierre Lafon, who, with the help of cellar manager Elsie Moore, are continuing this wonderful project.
