Leynes is an almost magical village, suspended precisely at the point where southern Burgundy gently fades into Beaujolais. Here the soil begins to tell a different story, shaped by rolling hills and silent hamlets. In this corner of the world, the Chardigny family has cultivated vines for more than two centuries. Yet it was with the arrival of brothers Pierre-Maxime and Victor-Emmanuel that the estate embraced a completely organic philosophy. Their Saint-Véran AOC Les Cornillaux is the result of this uncompromising choice. The territory of Leynes is a fascinating geological mosaic. The vineyards of this Chardonnay sink their roots into soils where Burgundy’s classic limestone merges with veins of granite. This particular composition gives the wine a tension and salinity that are difficult to find elsewhere. Every operation in the vineyard aims to preserve the vitality of the soil in order to bring the purest soul of the Mâconnais into the glass. After careful harvesting, the grapes are destemmed to eliminate any unwanted vegetal notes. Fermentation takes place in temperature-controlled stainless steel tanks to preserve the most delicate varietal aromas. The wine is then aged for 12 to 18 months in large oak vats. This slow maturation is not intended to “cover” the wine with oak flavours, but rather to allow it to gain complexity, volume and a silky texture. Intense straw yellow with golden reflections. The nose is a layered sensory journey: it begins with white flowers and yellow peach before revealing hints of toasted hazelnut and a touch of fresh butter from the ageing process. On the palate it fills the mouth without ever feeling heavy. The acidity is vibrant and carries the sip towards a long, savoury, almost chalky finish. This Saint-Véran has excellent ageing potential. Thanks to its important structure and Chardonnay’s natural acidity, it can comfortably rest in the cellar for more than five years, evolving towards even more complex notes of honey and dried fruit. Perfect with seafood risotto or pasta with clams and bottarga.

One brother looks after the commercial side, another studied oenology and gained experience in legendary wineries such as Foradori in Italy, while Jean-Baptiste spent years working as vineyard manager at one of the world’s true temples of wine, Domaine Leflaive. This combination of expertise has transformed the Domaine into a laboratory of excellence. The entire 20-hectare estate is organically certified and follows biodynamic practices, with the aim of allowing the soil to speak without chemical interference. What makes Domaine Chardigny’s wines truly unique is the terroir. The winery lies precisely on the fault line where the soil changes character: to the north dominate the clays and Jurassic limestone of the Mâconnais, the natural homeland of Chardonnay. To the south begin the volcanic and granitic soils of Beaujolais, the undisputed kingdom of Gamay.
