    • Clos des Topes Bizot is a small vineyard jewel situated just above the famous town of Beaune. Here Chardonnay is not merely a grape variety, but a silent interpreter capable of transforming limestone into emotion under the expert guidance of Domaine Chantal Lescure. We are in the heart of the Côte d'Or, in an area where the soil forms an ancient mosaic of clay and limestone. The particularity of this Clos lies in its elevated position, which gives the grapes extraordinary freshness thanks to the cool air currents descending from the hills. Since 2006, the Lescure family has cultivated this land according to certified organic principles. It is a radical commitment, made to respect the vitality of the soil and ensure that every sip faithfully reflects a specific vintage. The vines used for this wine have reached splendid maturity. The plants no longer produce large quantities, but instead concentrate all their energy into a few bunches rich in extract and personality. In the cellar, the grapes are harvested by hand and pressed whole, without destemming, in order to preserve the structure and vibrancy of the juice. Fermentation takes place slowly with indigenous yeasts in oak barrels, only 10% of which are new oak. This is followed by 15 months of ageing in barriques, softening the edges and adding buttery complexity without ever weighing the wine down. In the glass it shines with a straw yellow colour and emerald reflections. On the nose it opens with aromas of white flowers and lemon peel, followed by fresh almond and a mineral touch reminiscent of flint. On the palate it is precise and taut, with a structure that fills the mouth without ever becoming tiring. The finish is savoury and remarkably persistent. A wine unafraid of time, capable of evolving beautifully for 8 to 10 years while developing tertiary notes of honey and bread crust.
      Today we are in the heart of Burgundy, where wine is truly a family affair. This is home to Domaine Chantal Lescure, founded in 1975 by Chantal Lescure and Xavier Machard de Gramont. After Chantal’s passing in 1996, her sons Aymeric and Thibault took over the reins of the estate, choosing to honour their mother’s legacy through a bold and forward-thinking decision for the time: committing entirely to a form of viticulture deeply respectful of the land. Under their guidance, and thanks to the technical talent of François Chaveriat, the Domaine undertook a radical transformation that led to organic certification in 2009. The estate covers around 19 hectares of vineyards located in some of the most prestigious areas of the region. Its operational heart lies in Nuits-Saint-Georges, while the vineyards stretch north towards Chambolle-Musigny and south as far as Volnay and Meursault. This diversity allows the Domaine to produce almost twenty different cuvées every year, each one shaped by a specific micro-terroir – the famous Burgundian “climats”. While the vineyards are tended with artisanal dedication, in the cellar the guiding principle is “gentleness”. The winemaking philosophy avoids any kind of forceful intervention. Fermentations rely on indigenous yeasts, rackings are kept to a minimum and the use of oak is skilful and restrained, never overpowering. The goal is to craft wines that are authentic, pure and full of personality.
