In addition, there are subtle hints of minerality, typical of the calcareous-clayey terroir of this production area. On the palate, the wine confirms the promises made on the nose, showing elegant freshness and impeccable balance. The acidity is well balanced and contributes to a long and pleasantly fruity finish.
    • Vinification The vineyard is cultivated using organic and biodynamic methods, certified by ECOCERT sas and Demeter, with an average yield of 55 hl/ha. The grapes are selected manually, completely destemmed, then subjected to slow pressing and rigorous decanting. Fermentation with indigenous yeasts and spontaneous malolactic fermentation precede ageing on fine lees in parallelepiped stainless steel tanks for 10-12 months, without bâtonnage, with very limited use of SO?, simply readjusted if necessary at the time of bottling.
