After gentle pressing, fermentation takes place partly in stainless steel tanks and partly in French oak barrels to preserve freshness and aromatic complexity. The wine is then aged on its fine lees for several months with moderate bâtonnage, gaining greater structure, balance and elegance without losing precision or territorial identity.

    • This Côte de Beaune Blanc is crafted by Joseph Drouhin, a historic estate founded as far back as 1880 and managed by the family for four generations with the utmost respect for the environment. The winery has long been a true pioneer of sustainable viticulture. The entire estate was converted to organic and biodynamic farming in order to preserve the most authentic soul of every single parcel of land. We are in the heart of the Côte de Beaune, a legendary hillside strip celebrated worldwide for producing some of the finest white wines on the planet. Here, the landscape is shaped by gentle yet constant slopes where the vines root deeply into complex soils composed of limestone marl and Jurassic sediments. The Côte de Beaune AOC appellation is regarded as a true seal of winemaking nobility, globally synonymous with balance and longevity. Chardonnay reigns supreme here, expressing aristocratic nuances impossible to replicate elsewhere. The grapes are harvested entirely by hand and transported to the cellar in small containers to avoid premature crushing of the berries. After a soft pressing, fermentation takes place partly in stainless steel tanks and partly in oak barrels. The wine is then aged on its fine lees for several months. During this period, moderate bâtonnage is carried out — the delicate practice of stirring the lees. This artisanal technique gives the wine an enveloping roundness and silky density while fully preserving the freshness and aromatic precision of the varietal. Bright straw yellow in colour, enhanced by elegant golden reflections. On the nose, the impact is intense, ranging from white peach and yellow apple to ripe citrus fruits and delicate white flowers. After a few moments, hints of fresh butter and flint emerge. On the palate, the wine is enveloping, structured and beautifully balanced by a vibrant burst of fresh acidity. The finish is long, harmonious and marked by a persistent savoury minerality. At the table, it pairs beautifully with oven-baked monkfish medallions with butter and aromatic herbs, as well as tagliolini with white truffle. The wine’s minerality perfectly enhances the earthy nuances of the truffle.
